making some laterand wondered who has a good recipe, i was just gunna grate kumara, squeeze any juice out and bind with a egg yok and s and p.And then fry lightly.Any other versions!

iman007, I can't help you with a tried and tested kumara rosti recipe, however for some recipe options have a look at:-

If you like kumara, here is a great kumara rosti recipe from Revive cafe.
I'm sure, they wont mind us sharing it.
INGREDIENTS (makes 14 small or 7 large)

2 large kumara (red or gold)
1/2 teaspoon salt
1/2 teaspoon curry powder
1 tablespoon chickpea flour (or corn flour)
rice bran oil for frying
2 teaspoons poppy seeds

METHOD
cut kumara into large chunks and boil until soft (but still firm) - the skins should easily peel off after boiling
let cool or cool in cold water
grate kumara (use big holes on your grater)
mix all ingredients together gently
roll into balls and press down in pan
shallow fry in a little oil in a med-high hot pan for around 2 minutes per side or until golden brown
