I have a gf pastry recipe that has polenta in it. I was just wondering if the polenta would cook, as usually polenta needs to be cooked/boiled for about 20 minutes.

It cooks, just differently. The polenta helps to give body and crispness to GF pastry.

I find that the polenta is too hard but then some polenta is finer than others. Would do a trial run.
