Russet potatoes

I have not seen russet potatoes in our little supermarket.Could I use agria or rua!

Mmm that looks yummy.I'd say russet potatoes are used because they are a good baking potato which is starchy and dry, good for this recipe not waxy and has a lot of moisture. Can't see why agria or rua couldn't be used they are both good for roasting or baking, use either and try it.

It is unlikely you will ever see russet potatoes in the supermarket.The variety has been taken over by the fast food chains and they are grown specifically for them in NZ and Australia.And, they are kept under very strict security conditions.
