Yes you can. It's fine. Last time I did it I used a whole packet and when I stirred them through, it was too much noodles for the amount of sauce I did. If I used them again I'd use the noodles as a bed, and put the stirfry on top.

It's done all the time. It's called 'chow mei fun' or 'chow mifun' if you want to look it up.
