the fondant icing lasts forever, but I suppose it depends what sort of cake you are icing!

yep fruit cake will last ages. madiera (sp) would probably be ok too, I have had chocolate cake also but honestly it had gone dry as.

Thanks, I will try a madiera I think - so how would i store the fondant cake, in an airtight container or!

in a dry place but just in some cellophane or even a net curtain over it, the thing with putting it in a container is it is sometimes hard to get it out of the container without damageing the icing.

If you put the iced cake onto the lid of the container then slip the container over the top you wont have a problem with damaging the icing.

I would go with a mudcake or a fruitcake,they hold really well over time.Most other cakes will go very dry as they are not moist cakes.
