Hi guys, I am cooking cow tounge.After cooking and removing the skin, is it best to allow it to set or can I eat straight away!

best to press it.put it into a bowl with a plate and a weight on top of the plate

You can have it either way I like it hot though traditionally its usually pressed and eaten cold. Tastes like corn beef but much nicer texture.
