Easy & cheap treats

Just looking for some yummy recipes for desserts or baking treats :)

Very easy fruit shortcake.
120g butter1/2 cup sugar
1 1/4 cup flour1 heaped tsp baking powder
1 egg1 tsp vanilla essc.
Cream butter & sugar until very light & fluffy, add egg & vanilla, mix well (do the whole thing in a mixer or with a beater).
Add flour & baking powder, mix lightly until blended.
Put 1/2 mixtur into thebase of a square or round approx 8" greased tin. Put any fruit, fresh or tinned (drained) evenly on to the base.
Put the rest of the mixture on top of the fruit.
Bake 180c for 18-20 min. or until golden & cooked through.
Dust with icing sugar.
Serve hot or cold, serves 4 -6.
Good with vanilla ice cream if hot!

Really easy dessert. Sandwich a pack of ginger nut biscuits together with thickly whipped cream to make a log. Cover whole log (top and sides) with whipped cream, put in fridge for an hour or more. Just before serving decorate with whatever you like - I use mandarin orange slices and choc sprinkles. Looks great, tastes great and can be made early in the day.

When certain fruits are at their cheapest ( if you dont grow them yourself) that is the time to buy and process them for the freezer or bottle them for later use. Apples, stewed, or sliced and par cooked and frozen will give you a range of desserts such as fruit cobbler, fruit sponge, steamed puddings, or even just the stewed fruit with custard. You can make an apple shortcake which is great for a dessert with custard or ice-cream.
Golden syrup dumplings are made in a large saucepan and they are super easy and quick to do as are wee chocolate pots cooked in a water bath.
