Marshmallow Shortcake

My mother used to make a marshmallow shortcake using jelly crystals instead of gelatine, does anyone have a recipe like that please.

It is in the old Edmonds book: Beware tho, the jelly crystals these days are different, and doesn't achieve the firm effect, it can go quite soggy. Sorry my old book is fragile, and in quite a state on that page.

Marshmallow Shortcake

125g butter,
125g sugar,
1/2tsp vanilla essence,
1 egg,
225g flour,
1tsp baking powder.
cream butter & sugar, add essence,add egg, then sifted dry ingred.
Roll out to about 12mm thick. Place on cold tray bake 30mins at 180.

Jelly Marshmallow topping
1 pkt jelly soak in 1 1/4C water for 10 mins then boil for 8 mins.
When cool add 1C icing sugar & beat till thick & stiff.
Spread on cold base. Sprinkle with coconut or ice.

Here is a very old recipe I have used for years. just dug it out for a 5 years olds birthday party!

Marshmallow

1 Tablespoon gelatine
¼ cup cold water

½ cup hot water
1 cup sugar
½ teaspoon vanilla
1 teaspoon lemon juice

Put cold water in a bowl.Gradually sir in gelatine.
Let stand 5 mins.Put hot water and sugar in large saucepan.
Stir over low heat until sugar is dissolved.
Add gelatine mixture, stir over low heat until gelatine is dissolved.
Bring to boil.
Boil gently uncovered for 6 mins.
Remove pan from heat, let cool to lukewarm.
Put mixture in to mixer bowl.
Add vanilla and lemon juice.Beat on high speed until thick and creamy.

I spread it over a coldcookedshortcake base.Sprinkle with coconut.
Put in fridge to set.
