Please. I haven't found one anywhere, bur my Mum used to make it for us when I was a little girl. We loved it. I can't eat potatoes, but substitute Kumaran or Swede. I opened my mouth and promised it for dinner! Now I have to come up with the goods!

Throw corned beef and an onion in food processorand pulse til chopped fine. - or do it by hand.
cook kumera and chop also (or mash) and stir into meat and onion.
Fry in a a heavy frypan with lots of oil and a bit of butter until it goes brown and crispy on the bottom.Flip over as best you can (it will break up but doesn't matter) and fry other side til crispy.
Top with a fried egg if you like and serve with lots of tom sauce- yum

If you want an easy yummy corned beef pie try cooking it then slicing it thinly into a casserole dish or lasagna dish then spooning mashed vegetables over the top, I use potato and carrot but you could use kumera and carrot, even pumpkin, grate some cheese over and bake.
