Putting eggs in cold water before baking?

does anyone else do this! iheard about it tried it and it makes the cakes come out much softer/lighter just wondering how it actually works lol

Eggs are best at room temperature for baking so it's probably the fact that the water is warmer than the fridge that makes the difference.

Have never heard of this and am surprised that it would produce better results because traditonally cakes and baking should always use room etmperature eggs as they help to create more volume, rise easier, and beat in better.

Yeh room temp for eggs when baking I always thought.

Only reason to put eggs in water is to see if any are bad and any floaters

thats what i thought also lol but it works much better putting it in cold water i couldnt seem to figure it out

mell16 just wondering if you normally keep your eggs in the fridge then take them out to bake or are they already at room temperature.Mind you sometimes during the winter my eggs from the fridge are 'warmer' than at room temperature ;-)
