This tried & true recipe is interesting because you can play with the amount of sugar in it and still get a good cake.

BANANA CAKE

Beat 125gms butter OR margarine with 1 cup sugar

Add 1 egg and beat, then two large mashed ripe bananas

Add sifted 1 & 3/4 cups flour, 1/2 tsp baking POWDER, pinch salt

Dissolve 1 tsp baking SODA in 1/2 cup milk

Stir in and put into loaf tin lined with baking paper

Bake 50 mins-1 hour at 180*C

Double the quantity for two loaves

I have made this with just 1/2 cup sugar and the volume is still satisfactory, although if you use the full cup you will get a larger cake.
