1 cup wholemeal Flour 1 cup Flour 2 cups raw sugar 2 teaspoon Cinnamon 4 eggs beaten ¼ teaspoon salt 2 teaspoon baking soda 3 cups finely grated carrot
Sift and mix dry ingredient, add oil and stir well. Stir in beaten eggs then add carrot. Mix thoroughly. Grease the sides of a muffins tin and line the bottom with greaseproof paper. Pour mixture into muffin tin. Bake at 350 F for 30mins or until cooked.
Icing 4 oz cream cheese 2 oz Butter 2 cups sifted icing sugar 1 teaspoon Vanilla essence 1 cup chopped walnuts--- leave it last for topping
this is so yummy and you need to make it. This is my favourite muffin

That sounds yummy. Have you made it with just white flour as I have no wholemeal flour till I go shopping. Lots of sugar !

Looking at the recipe I would strt off with 1/3 cup oil.also white flour would be fine, just give is a slightly different taste

opp, my bad about oil. It about 1 cup of oil. Not yet try with white flour without wholemeal flour so i think that will be interesting
