How old can eggs be for Pavolva?

I know you get a better Pav if you don't use fresh eggs, but how old can they be? We have our own chooks and i put 3 eggs aside to make a pav, but now i'm not sure how long they have been there! If they float in water, they are obviously stale, but they should still be ok shouldn't they?

hhmm, they are more than 2 weeks old, but have been in the fridge. think i might just ditch them and make sure i date the next ones i put aside.

I keep eggs for 2 month in the fridge-- no problems

thanks for that lily. I will crack them open and see what they are like. If they stink, i'll biff them, otherwise i'll whip them into a pav
