I am wanting to make the cheese sauce for lasagna more like a souffle, puffy topping than the standard sauce consistency as have had it like this from a cafe and was just delish! Thanks!

The cheese sauce on top of Moussaka has a beaten egg added which gives it a lighter texture, not sure if that is what you mean.

Hey thanks for that, It was about 2cm high and very light and puffy but not runny.
