Doh!I was just reminded that it came from the AWW microwve cookbook and not Alison Holst at all - sorry!

Carrots with Curry Coriander Sauce 500g baby carrots, peeled 1/2 cup chicken stock 1 onion, finely chopped 30g butter 1 TBLSP plain flour 1/2 cup milk 2 tsp tmoato paste 1 tsp curry powder 2 TBLSP chopped fresh coriander Combine carrots & stock in dish, cover, cook on high 7 minutes or until tender, drain, reserve stock.Combine onion and butter in bowl, cook on high 3 minutes, stir in flour then milk, reserved stock, tomato paste and curry powder.Cook on High 3 min or until mixture boils and thickens, stir once during cooking.Stir in coriander, pour over carrots, reheat on high 2 minutes.Serves 4
