Easy Pudding for tonight

We have had a very busy weekend and an easy dinner tonight but wanted to make a nice easy pudding, nothing to complicated as I am too tired to think hard

Fruit crumble, apple or banana fritters, apple sponge

I just made this and it looks good. Easy as well

GINGER RHUBARB CRUMBLE

10 rhubarb stalks, chopped into 5cm pieces
¼ cup sugar
juice ½ orange
2 tablespoons water
1 cm piece ginger, peeled and grated
100g butter, softened
100g demerara sugar
200g plain flour
1 teaspoon ground ginger

cream or ice cream, to serve

Preheat oven to 180°C/160°C (fan forced).

Place rhubarb, sugar, orange juice, water and ginger into a 4 cup capacity baking dish, toss to combine. Place in the oven and cook for 10 minutes until just cooked. Remove from the oven.

Meanwhile, mix the butter and sugar together until the mixture resembles breadcrumbs. Then add the flour and ground ginger, stir to combine.

Sprinkle the crumble mixture over the rhubarb and bake in the oven for 30-40 minutes, until golden-brown.

Got any frozen or canned berries? , Choc &Berry SS pudding. Or plain choc one easier again without rubbing butter in flour.

Might be too late for tonight, but here's one for next time...
FRUIT COBBLER
Mix:
1 cup flour
2 Tblsp sugar
1 & 1/2 tsp baking powder
1/4 tsp salt
Rub in 4 Tblsp butter or margarine
Add 1 egg whisked with 1/4 cup milk
Put six mounds on top of hot fruit in baking pan
Bake 25 mins at 200*C
Dust with icing sugar

This is excellent with any stewed fruit at all, even a can of heated apricots or peaches when in a big hurry.
