Am wanting to make these, but what does everybody put in them apart from cheese and bacon.

4 Golden or orange kumara (1 per person)
2-3 rashers of Kiwi bacon diced
1 onion diced
1 tin crushed pineapple
100g tasty cheese
2 tbs Tararua Cream Cheese
salt & pepper
Tararua Sour Cream to top
1 tomato
Method
Slice kumara in half and cook on high in microwave till soft - approx 10 mins depending on size. Scoop insides into bowl and mash. Add salt adn pepper to taste.

Saute onions and bacon and stir into amshed jumara with pineapple and add half the tasty cheese (grated) or gently fold through the cream cheese into mixture once cooled only partly mixed in.

Top with a slice of cheese and tomato and grill in the oven for 20 mins and top with sour cream.

Havent tasted this but it sounds nice and it looks good in the picture.
1 medium orange kumara, leave skin on, halve lengthways
1 tsp olive oil
1 tsp Sea salt
1 Tbsp olive oil
1/2 onion, grated coarsely
1 garlic clove, grated finely
1/2 tsp ground coriander seeds
1 small egg, beaten
50g feta crumbled
2 Tbsp cashew nut pieces toasted
pinch chilli

Microwave kumara for a couple minutes until they begin to soften - this will reduce the cooking time in the oven. Rub kumara pieces with oil and sprinkle with seasalt. Bake in the oven for 15-25 minutes at 200 degrees (cooking time depends on how well you microwaved the little gems) until golden and cooked through. Take out of the oven to cool whilst preparing the mix below (keep the oven on, we will be using it again soon)

Mix onion, garlic, coriander, egg, feta, cashew, chilli. Carefully scoop out the flesh of the kumara and add to the egg mixture, mix it all up with a fork until well combined. Fill the kumara shells with the stuffing. Place back in the oven for another 10 -15 minutes until golden.

If you like Tuna you can have tuna and corn.

Hey thanks so much everyone they all sound pretty yummy, will hopefully try them out next week if I can shake off this darn flu I have at the moment.

Abbey - thanks for spelling kumara correctly. Increasingly it gets the 'kumera' treatment.
