Hello all you experts!I'd appreciate some advice please.Jewish Cake (Edmonds recipe) is a family favourite, we love the spices and sultanas, however it's always very dry.Any ideas on making it more moist!

I don't know that recipe, dixiechicks. If you can post the list of ingredients in here someone may be able to offer some ideas.

Have just realised that I have the recipe in my 80s version of the Edmonds book which shows how rarely I use it now. That recipe does look as though it might be a little dry, dixiechicks. Do you soak the sultanas in any liquid before adding them i.e. heat them over a low heat with a couple of tbsps of fruit juice until the liquid has been absorbed ! Perhaps you just need to add some milk or fruit juice to the mixture or put filling on top of the cake as well as between the two layers.
These are just a couple of ideas which may help and perhaps someone else will be able to come up with a better solution.

Add more fat, or an extra egg, or a tablespoon of golden syrup.
