Pickled red onion

Hi, I recently had a lovely salad at a restaurant in Waikato which had red onion. The flavour was lovely (not strongly vinegary) without the sharpness of freshly cut onion and I suspect it was pickled somehow.
Does anyone have a recipe please! TIA

Make a vinaigrette (3 parts extra virgin olive oil, 1 part red wine vinegar, salt and pepper) and macerate sliced red onion into it for an hour or so.It will soften the flavour.

slice onion thinly and sprinkle with a tea spoon of sugar then about half of a lemon to taste and size .leave for 15 minutes and it is great in a salad . you can also mix in parsley and add to a tin of fish tuna or sammon its yummy .used to be around wellington in the 1980s
