Grated, and quickly sauteed in melted butter, with a smidgeon of salt and a couple of grinds of nutmeg.Simple and delicious.

Add a couple of grated carrots to coleslaw, so there's equal quantities of carrot and cabbage. add sunflower and pumpkin seeds, red or spring onion if you want, then toss some of your favourite vinegar through for a dressing.

Simmer in a little water with honey and garlic added, or juice.

I tend to julienne them and may put some fresh ginger with them, when nearly cooked drain of most of the water add butter and honey or maple syrup and cook until the water evaporates and they are nicely glazed.
