Seafood Chowder and Leeks

Seafood Chowder and LeeksCan be made with 1kg of clams
Ingredients:
12 mussels, cleaned and debearded, 2 med agria potatoes and 2 red kumura, cut into 2cm cubes, 1 med onion, sliced, 2 leeks chopped, little butter, 3-4 rashers of bacon pre fried,
1 cup water, ground black pepper, salt, fresh parsley, thick white sauce, crusty garlic bread.
Method:
Sauté 2 chopped leeks (lid on) in a little butter until soft. Boil some diced agria potatoes and diced kumura until just turning soft. (little salt). drain well.
Par fry 3/4 cup bacon chunks and then mix/fold all together. Now add the mussels to a pot with water and a sliced onion.
Simmer gently moving about until the shells just open . Remove the mussels, extract the mussel meat and discard the shells. Cut mussels in half.
Add strained mussel liquid to leeks and also mussel meat.Mix/fold all well and simmer. Make a thick white sauce and also add. Now bring to the boil and
immediately turn down to simmer. add fine chopped parsley and cracked black pepper and fold through.
Nice crusty garlic French stick on the side and a sprinkle of fine parsley over the chowder.

Sounds good fisher how are ya! Bit to hot for soup and chowder in my neck of the woods yet Ha ha, summer still continues tis brilliant.But in saying that just made a big potful of fish stock up for the freezer this arvo getting ready for the soup season, my freezer is a bit full so having a clean up tommorow all going well the chicken stock will be getting brewed.Have you tried the blue cod and oyster chowder! Bootiful.
