Is it necessary to buy the curd cutting knife or will any knife do!

fogs, as summersunnz has advised "any knife will do"BUT as most, if not all other knives have pointed ends to their blade, if you are using any knife you need to be careful of scratching or cutting into the sides of whatever container the curds have been set in.A curd knife has a long, quite narrow, blade with a rounded end that prevents such a likelihood of damage, especially to plastic containers.:-))
