Ideas what to do with smoked chicken... apart from having it with a salad. Any ideas welcome ! !

A few years ago "Meals in a minute" put out a nice recipe which I used over and over - it is a salad but a bit different - smoked chicken, rock melon, honeydew melon, tomatoes. Mix tog. with a creamy pesto dressing. Used to be able to buy the dressing - not now, but works well with that pesto in a jar (forget what it's called) mixed with mayo.

This is not my recipe but one of the winners off Good Morning TV1
Oil 4 rashers of bacon 300g smoked chicken breast 1 onion, chopped 2 cloves garlic, crushed 400g fresh pasta 375ml fresh cream Parmesan cheese to taste Salt and pepper to taste Fresh herbs to taste (parsley, basil). Optional.
Method - Fill the kettle and boil the water. Put in a pot of water to boil the pasta. Do this 2 times. This will speed up the cooking time. - Fry bacon in oil until crispy, remove from pan. - Fry onion, garlic and chicken in same pan (adding extra oil) as bacon and fry until cooked. - In a small bowl combine cream, parmesan, salt, pepper and herbs. - When water is boiling, cook pasta until al dente - only a few moments for fresh pasts, then drain and return to the pot it was cooked in. - Add all other ingredients (bacon, chicken mixture and cream mixture) and stir well.
