Birthday cake Gluten Free

I know I could spend an hour or more looking through all the GF threads but this could be easier:
I am looking for a GF cake that is not chocolate for a 5 year birthday that I can decorate with fondant and place a ballerina on figure on top (made of fimo)
A sponge is possibly too light and I have already tried 3 recipies and the texture has been too gritty or overpowering with one of the flours used.

Have you checked Countdown they often sell GF carrot cakes

You could do an orange/almond cake.Would be nice and firm for the fondant.

Use a chocolate cake recipe you know and like the texture of then modify it.

BASIC CAKE
125g butter
170g Castor Sugar
3 eggs (55g size) beaten
1 teaspoon vanilla
1/4 teaspoon almond essence
300g GF SR Flour, with xanthan gum
200ml Milk
Cream butter with sugar until light and fluffy.
Gradually add beaten eggs.
Add sifted flour and milk alternately. Stir gently to combine.
Bake in lined 20cm round tin at 170
