What a waste. Brisket is soooo tasty. Use like shin, great in the crock pot.

Casserole it, or if you are into boilups its really tasty with watercress. I got some about 3 weeks ago and it was surprisingly not very fatty - it usually is quite bad.

Absolutely. Makes the best boil-up and I gather watercress especially for this particular dish. But if you don't have watercress, any leafy green vegetable works just as well, even though they all lack the punch of watercress.

Cook it in the slow cooker. If its in thin slices, leave the slices whole, add a pkt of french onion soup, and serve it like a braised steak meal.
If you're worried about the fat content, trim away what you can prior to cooking, then when cooked leave it to cool and set, the fat will come to the top and skim off.
