I was in a waiting room and was reading this months taste magazine and there was a mention of this yummy recipe,would anyone be willing to find it for me !

Taste Magazine's VIETNAMESE CARAMEL CHICKEN

8 chicken drumsticks
½ cup caster sugar
3 tbsp each offish sauceandlight soy sauce (use a soy sauce labelled gluten-free)
2 star anise
2 garlic cloves, peeled and finely sliced
4cm piece ginger, peeled and cut into very fine matchsticks
½ cup blanched, unsalted peanuts
steamed rice and green salad, to serve

Using a cleaver or large sharp knife, cut the knuckle off the bone end of each drumstick to neaten the shape.Remove the skin from each drumstick.
Combine the sugar and ⅓ cup water in a large sauté pan or saucepan and bring slowly to the boil.Cook over medium heat for 7-8 minutes or until the mixture is deep golden.Working quickly, and taking care as the mixture will spit, add 250ml (1 cup) water to the pan and swirl to combine with the caramel.Add the fish sauce, soy sauce, star anise, garlic and ginger, and bring the mixture to a simmer.
Add the peanuts and chicken and cook, turning the chicken often, over medium heat for about 40 minutes or until the chicken has cooked through and the liquid has reduced and thickened slightly.
Divide the chicken, peanuts and sauce among bowls and serve with steamed rice and green salad.
Serves 4.:-))
