unless you have a proper preserving apparatus where you can check temperature- don't . Very risk .Same with mushrooms

I bottle my own marlin. I follow the U.S department of agriculture guidelines for all my preserving. According to them you can safely leave the bones out if you wish but DO NOT bottle fish if you don't have a pressure canner. Procesing fish in a hot water bath is an out-dated and dangerous method, a pot of water wont get hot enough to kill botulin spores and that could kill you!
