Favorite fish recipe

What's your favorite thing to do with fresh fish! I have some monk fish and trying to figure out what to make for dinner.

i love to crumb fish with parmasen cheese and breadcrumbs mixed together.

Monk Fish with a breadcrumb topping

Ingredients:

butter
garlic
breadcrumbs
lemon rind (grated then chopped)
cheese (grated)
salt / pepper

Method:

Melt butter in a pan add garlic then breadcrumbs.
Remove from heat and mix in lemon rind, cheese, salt and pepper.

Put your monk fish in an oven dish.
Sprinkle your crumble mixture over your fish.
Cook in oven.

I was recently given this recipe by my neighbour. I tried it withwith kahawai(sp!) and it was lovely.

CREAMY TARRAGON FILLETS

750g skinless, boneless fish fillets
1/2 cup cream
1 tablespoon lemon juice
1/2 teaspoon sugar
1/4 teaspoon dried tarragon or whatever herbs you have.
1 tablespoon parsley
Salt and pepper to taste

Cut fish into serving-size pieces and place in a greased ovenproof dish.
Combine cream, lemon juice, sugar, herbs, parsley and seasonings. Pour over fish.
Bake at 190C for 15-20 minutes or until the fish flakes when tested.

oh yum - maximus- that sounds delicious.Have just made the monkfish recipe from r-mvz.Hope it's a winner!But will have to try the creamy one too I think!

I'd also like to reccommend using monkfish to make kebabs, I make themwith the monkfish wrapped in bacon, scallops and veg like red onion, eggplant, courgette etc.

I caught some sea perch yesterday and am going to try and cook it inside beer bread.Beer bread is just one bottle of beer to 1 cup of flour, plus chopped onion, parsley, salt and pepper to season and a little paprika for colour and addtional flavour.Make the beer bread mixture, wrap it around the (quite small) sea perch fillets and bake in the oven on a flat tray.Yum.
