Also can you use the same basic recipe then add what ever you want like choc buttons, dates, apple, bananas etc.

The secret to fabulous muffins is that you don't overmix the mixture.Just fold in the last ingredients slowly til the mixture no longer has flour in it.

I learnt this from Allyson Holst's Muffin Recipe Book, and my muffins are very sought after amongst my friends and family! :-)

Chocolate & Banana Muffins, Alison Holst’s recipe in ‘Marvellous Muffins’

2 cups self raising flour, 1/2 cup caster sugar

1/2 cup chocolate chips (or I use block of Whitakers 62% dark chocolate and cut bits of chocolate off to use), 1/2 tspn salt,

100 grams butter , 1 cup milk, 1 egg,

1 tsp vanilla essence, 1 cup (2-3) mashed bananas

(Turn oven on to preheatand butter muffin cups.Recipe makes 12 muffins or maybe 10 if you want them a bit bigger)

With a fork, stir together in a large bowl the flour, sugar, chocolate chips. and salt.

In another container melt the butter, remove from the heat,

then add the milk, egg and vanilla, and beat well.

Mash and measure the bananas. Stir them into the liquid.

Tip all the liquid mixture into the dry mixture.

Fold everything together carefully until all the flour is dampened, stopping before the mixture is smooth.

Butter each muffin cup and fill.

Bake at 220 degrees C for 12 to 15 minutes, until the muffins spring back when pressed in the centre.

I make them when I have (very) overripe bananas to use up.Then usually I wrap some muffins in gladwrap and freeze,to take a frozen muffin to work to eat during after it has defrosted.

This is the one we do .
Basic Apple and Sultana Muffins
2 cups plain flour
1 tbs baking powder
2 tsp ground cinnamon
3/4 cup sugar
2 medium apples, cored, peeled, chopped
3/4 cup Sultana
125g butter or margarine, melted, cooled
2 eggs
3/4 cup milk

Preheat oven to 180°C
In a bowl put the flour, baking powder, cinnamon, sugar, apples and raisins . mix
In a separate bowl mix the butter, eggs and milk
Add the wet ingredients to the dry (dont over mix)
Put into muffin tins and bake for 20 mins or until cooked

Make these all the time.Very easy.
Basic Mix
Mix together:
quarter a cup of oil
half cup of milk
Add and mix:
1 eggand half a cup of sugar
Fold in: two cups self-raising flour
Add whatever extras eg raisins, walnuts etc.
Delicious topped with a teaspoon of any jam and a teaspoon of cream cheese before baking.
Bake 20 mins 180C

Muffin paper cases set inside the muffin tin, no mess and no trying to release muffin from pan.

Yes thank you donna23 paper cases set inside the muffin tin would be best as I want to do the baking with my 3.5yrs Grandson and that way we won't be chasing paper cases and mixture all over the tray.

i make alison holst light carrot cake in to muffins with the best vanilla cream cheese icing youve ever had in your life
so here goes
2 large eggs
1/2 cup oil(canola is fine)
1 cup brown sugar
2 cups grated carrot
1/2 tsp baking soda
2 cups selfraising flour
2 tsp cinnamon_ i add 1 tsp mixed spice also

beat the fisrts 3 ingrediants till light brown and frothy
then add carrot stir
and lastly add sifted dry ingredients and this is where you would fold in with a metal spoon to just combine but not overwork the ingredients

spoon in to fill muffin tins 3/4 full bake at 180 for 12-15 mins ish
it will really depend on your oven
poke with a knife if they come out clean theyre done
use patty cake liners if you can much safer!
cool and ice
i double this recipe to get 24 large muffins and 12 minis

vanilla cream cheese icing
3 cups icing sugar
125gm butter
250gm pack philladelphia cream cheese
1/4 tsp vanilla essence

using electric beaters or a wopping forearm
blend the cream cheese and butter together till soft and blended
add 1 cup of the icing sugar and beat till smooth then addd the rest and the vanilla
beat for 3 mins till light and fluffy
and then pipe on to your muffins

there will be quite a bit of icing left you can freeze it
or sit down with a spoon and indulge- naughty
it is sooooooooooooooooooooooooooooo-
ooooooooo good!

Coffee & white chocolate muffins
2 cups flour
4 tsp baking powder
3/4 cupsugar
1 cup white chocolate chips or chopped white choc
2 eggs
1 TBLSP coffee essence
100 gm butter, melted
1 cup milk
1/2 cup coffee crystals
Preheat oven 200 C. Spray muffin tins. Large bowl mix flour, BP, white sugar and chocolate chips. In separate bowl, beat eggs, coffee essence, melted butter and milk together. Mix the wet ingredients into the dry ingredients stirring to just combine, don't over mix.
Spoon into prepared tins, sprinkle each muffin with coffee crystals, bake 15 - 18 min. Cool on rack.
Have made these quite a few times, they are yum.

My muffins are always moist and still fresh after 3 or 4 days - I attribute this to the fact that I use oil instead of butter in my muffins, weight for weight the same - I use either canola or sunflower oil

Deborah > ne pas le9siner sur le bicarbonate, bien brttae la pe2te au fouet pour qu'elle soit ae9re9e, remplir les caissettes quasiment jusqu'en haut et mettre les caissettes en papier dans un moule e0 muffins pour pas que la pe2te qui gonfle tombe sur les cf4te9s. :)
