Any ideas of what we can do with fresh beetrrot. DH is trying his hand at bottling some but looking for ideas for the rest.

I just peel beetroot and grate it into a salad.You could also roast it.

Ilike them cubed, boiled, served hot in a sauce a little sweet and sour with mashed spuds and corned beef or sausages

slice big ones in half after scrubbing clean.sprinkle salt and black pepper over the cut side. a drizzle of balsamic and place cut side down on baking paper. drizzle of olive oil to coat and some more salt and black pepper. Into oven till knife can pierce. When bottling beetroot, make some with cubes about 15mm square. look great added to salads just before serving.
