Recipe for roating beetroot please

Has anyone roasted beetroot!Would like to try it this way but unsure how long to cook for and would I just brush them with oil and bake.

from annabel langbeins book
line tin with baking paper, cut beet into wedges, add 2Tblsp extra virgin olive oil, 1 Tblsp brown sugar, 1 Tblsp balsamic vinegar, salt and ground black pepper,bake 40-45 minutes

Just put them in with the other roast Veges they take about the same time as Potatoes.

Chop into chunks and roast with balsamic vinegar and olive oil.Mix with some feta and roasted pine nuts .Yumbo :-)

Oooh, yum. Cooked beetroot with either sourcream or a horseradish sauce. Now there's an idea for dinner this week.

I peeled mine when I cooked them for tea tonight. Even hubby liked them which means that i will be serving beetroot done this way again. Served up with new potatoes, beans, broccoli and roast chicken. Yum. With apple ginger sponge for dessert.
