I was thinking of fritters then just frying the sausages but maybe I should cook them together somehow! ideas.

do you have any eggs!I'd probably chop the sausages up and gentley fry them then add them to an egg mix with grated zucchini (herbs, cheese etc) and make into an ommelette or even a frittata!
