Low fat fish curry

hi im wanting to make a nice fish curry but that is low fat! can anyone help me! thanks :)

Fish & Tomato Curry

serves 6

1 kg firm fish fillets - trevally, hapuka, terakihi
¼ c lemon juice
¼ c cider vinegar
2 tab oil
2 cloves garlic, crushed
1 med onion, chopped
1 tsp powdered cumin
½ tsp powdered turmeric
¼ tsp chilli flakes
1 tsp black mustard seeds
1 tab fresh ginger, grated
1 tsp brown sugar
1 tab tomato paste
¾ tsp salt
2 tsp flour + ¼ c water mixed
410 can tomatoes

(5 Curry leaves if available)

Cut fish into 2 - 3 cm pieces, combine with lemon juice and vinegar & refrigerate 40 - 60 min.

Heat oil, saute onion and garlic 2 min until soft.Add spices, curry leaves, ginger and sugar, stir over med heat until seeds pop.Add tomato paste and salt and stir, then flour paste.Add tomatoes, simmer uncovered about 10 minutes until slightly thickened.

Add fish and marinade, stir over medium heat until fish just cooked - 5 min.

Still trying to figure out where the fat would come from in a fish curry.

Butter, ghee, coconut oil, mustard oil, coconut cream or creamfeature in many curries, including fish curries.

If you are desperate buy a packet or jar of green curry paste and add the fish and veges to that - omit the lovely coconut cream (or get low fat coconut "cream" - not really cream then .) and cook for 5 minutes and you are done.

Make sure you do not add any rice to that though, as that is going to make you fat :)
