Never cooked anything vegetarian in my slow cooker except big amounts of dried white beans which I then froze to use in various dishes.

Apart from that my slow cooker is used for beef, pork, ribs, chicken soup (made from old laying hens) . maybe not what you need recipes for.

great way to cook Chickpeas I used to do quite often. They keep in jars in the fridge for a week or so. Do big batches this website has instructions.

or one of our family favouites

Tapioca Pudding
• 4 cups milk
• 2/3 cup white sugar
• 1/2 cup small pearl tapioca
• 2 eggs, lightly beaten
• 1 tsp Vanilla essence



DIRECTIONS
1. Stir together the milk, sugar, tapioca, and eggs in a slow cooker. Cover, and cook on Medium for 3 hours, or on Low for 6 hours, stirring occasionally. Serve warm.
