Relish help please.

I have just made some cucumber,pinapple,onion relish.
was halfway thru putting ingredients in pot, when visitors arrived.
Have just re-read the recipe, and found I should have left the cucumber in some salt overnight.
In my rush, i put all the ingredients in pot.
It tastes nice, and looks good- 8 jars, but it has no salt.
the recipe had 3 cups of vinegar and 3cups sugar.
boiled it for 1hr.
Will it keep, or what will happen to it. never forgotten salt before.

Sounds yum. If you have doubts or get no answers maybe put in the freezer & take out as needed. Should be ok though.

The reason for putting salt in and leaving overnight is to draw out excess water and make your relish thicker when you boil it.It shouldn't matter at all, but you might need to add salt to it as you go just for taste.
