Any clues on how it should be made and how it should be kept!

you can do it several ways, one using artificial sweetener which I can't stand,
2ndly use apple or pear juice needs to be pure though. or
3rdly which is what I do is just use ½ the amount of sugar eg 1.5kg fruit, 750g sugar.
it makes a tart jam and will possibly need a bit longer on the boil to get to setting stage. So far mine seems to be keeping ok but does need to be in fridge once opened.

Made some plum jam last week, using 1kg plums and 500gm sugar and 1tblsp lemon juice. Thickened up nicely, just needed to boil a little longer. Also keep mine in the fridge.
