the saucepan lid on/off while potatoes are still hot. Was thinking they may go soggy if left on!

I sure don't boil them first. But if you are, I would drain them, uncover them and put them in the fridge fast, or they will keep cooking.

I boil mine first for chips all the time particularly if taking them out on the boat. Boil until just cooked almost underdone then drain and leave in the pot on the bench with lid off usually for a while then into fridge until needed though you can use them straight away it is best next day. Then fry in pan using oil 50/50 butter mix until golden brown. mmmmmmmmmmmm yum.
