Sushi rice question

HiI have a good recipe for Sushi rice but it's quite time consuming so I am asking about freezing the sushi rice. That way I can make larger quantitiesand also it would be faster do make after work etc.
Do you think it would be better to freeze the rice before adding the rice wine vinegar or afterwards!

Next time you make it, why not do a wee sample of both options and test it.You'll probably get the best answer that way

I wouldn't.But I'm not an expert on the matter.I do know that rice can be "iffy" when it comes to food saftey.Have to say, with sushi rice. I add a lil of the powdered "sushi seasoning" and it comes out fine. and cheap.
