What's the best pancake recipe as I have lent out my Edmonds cook book and google keeps giving me alternative recipes.

2 cups of Self Raising Flour 1/2 tsp of salt 2 tsp of sugar 3 eggs 1 3/4 cups of milk 60g of butter melted
Sift Flour and salt together and sprinkle sugar over. Beat eggs with milk and pour over flour. Stir until all flour is moistened - batter will be lumpy. Lightly stir in melted butter. I sometimes add a little more mil once mixture is well mixed to make a slightly thinner batter.
