I have recently read or heard somewhere that some of what is sold in New Zealand as palm sugar is actually mostly coconut compressed into blocks with a small amount of palm sugar and/or colouring added. Can anyone shed some light for me please !

It's notcoconut.The Thai pale pinkish discs sold as palm sugar can contain some cane sugar I believe, but most are pure palm sugar.You can also get jaggery, which is unrefined cane sugar.
