Dark Chocolate Truffles

125ml cream
300g dark chocolate, chopped finely
60ml Grand Marnier
150g dark chocolate, melted, extra

Bring cream to the boil in a small saucepan. Pour over the chocolate in a medium bowl; stir until smooth. Stir in liqueur; cover, refrigerate, stirring occasionally, for about 30 minutes or until the mixture is thickened.

Roll rounded teaspoons of mixture into balls; place onto a foil-lined tray. Cover, refrigerate until firm.

Dip truffles quickly in extra chocolate, return to the tray and refrigerate until set.

Jamies chocolate truffles

makes about 50 teaspoon-sized truffles

• 300ml double cream
• a knob of unsalted butter
• finely grated zest from 1 orange
• 300g good-quality dark chocolate (70% cocoa solids), broken into small pieces
• a pinch salt
• a splash of brandy (rum, whiskey or red wine)

Coating
• a handful of mixed nuts (Brazil nuts, toasted almonds and hazelnuts) or
• 3 tablespoons cocoa powder

Put the cream in a pan over a medium heat and let it heat up. You don’t want it boiling, just hot. As soon as tiny bubbles start to appear, add the knob of butter and the orange zest. Once the butter has melted, pour this hot mixture over the chocolate pieces, whisking as you go, so the chocolate melts nice and slowly. If the mixture splits slightly, don’t worry, you can bring it right by adding a splash of boiling water.

Add a pinch of salt to the mixture. Stir in a splash of brandy.
Once completely melted and smooth, pour your melted chocolate mixture into a bowl. Pop this in the fridge for about 2 hours to set. You can always do this a few days before if you want. About 30 minutes before you’re ready to make your truffles, pull the bowl out of the fridge and let the chocolate warm up to room temperature.

Put your mixed nuts into a plastic bag and use a rolling pin to bash them up quite finely. Put the nuts or cocoa powder in put the nuts in a bowl ( or anything else you fancy). Have a small bowl with boiled water and using a heated teaspoon scoop the chocolate. Roll them in the coating. Leave in a coll place till ready to serve.

These are pretty basic truffles, are certainly quick and easy, and yummy as well!

Melt
100 grams butter
1/2 cup brown sugar
1/2 tin condensed milk
1 tsp vanilla essence
2 tsp cocoa

Add 1 packet crushed super wine biscuits.
Cool.Then roll in coconut.

I did toffee pop truffles today, which is two pkts toffee pop biscuits, just under tub of cream cheese, and blitx them together and then dip in white chocolate and roll in chocolate hail, not for the faint hearted lol.
