What to make with zucchini, bacon & cooked potato

Any ideas, thinking of a quiche, eggy slice sort of thing. Have most basic pantry items, no pastry though, thanks

self crusting quiche.made one yesterday, went down a treat with all.

I would fry up the zucchini in some butter with salt and white pepper until just browned.mash up the spuds.fry the bacon up until crispy and chop into pieces.
Now slice the zucchini into small bits, add the bacon and mix well into the spuds.add some salt and pepper and a little mixed herbs. now form into croquettes and press/roll into breadcrumbs.
Into pan with some oil and roll around until heated through. remember everything is already cooked so its really to brown up and heat through.

Zucchini Savoury Loaf

380 grams Zucchini grated
3 to 4 rashers bacon finely chopped
1 cup grated cheese
1 cup self raising flour
1 large onion finely chopped
1/2 cup oil
5 eggs
Salt and Pepper to taste
Mix all together, into a widish Loaf or a sort of Lamington Tin well greased, paper lined, bake at 180c for 50 to 60 minutes until well golden brown or the top bounces back with a slight push of finger. Serve.

Very nice Quiche type of dish, could add or alter other veges like potato etc, but keep in mind that the overall volume would need to be altered.

Sprinkle extra grated cheese on the top and then sprinkle with seeds of your choice - pine nuts, sunflower etc.These crisp in the oven and add a tasty crunch.Also a layer of thinly sliced tomato on the top just under the cheese and seeds goes down a treat as well.

have you a tin of tomato sauce / tomato onions and zucchini with bacon base and then mashed potato on top, you could make the potatoes into croquettes and make a zucchini onion and bacon in a cream sauce
