Pavlova. why the air!

I can make awesome pavs, but they always have a bit of air in them , is there anyway to stop this, as the bought ones dont have it

Lol. The bought ones also do not have that lovely crispy shell either and they are all-over the same size. No little pav mountains on bought ones. I guess they just have technology on their side.

I use the recipe from the edmonds cook book & dont get too much in the way of air.

God I loathe store bought pavs - stick with your home-made ones, I bet they're fantastic, the crispy shell is the best bit IMO
