I am wanting to make a white chocolate mud cake, but unsure how to do the chocolate around the sides. It is melted and cut into oblongs and stuck on to the ganache. What is the proceedure to do this! as I don't want the chocolate to break when I cut it.Would it be best to melt the chocolate on some backing paper lining a sandwich tin! Thanks:)

hi i was told the other day from the lady at the cake box in howick that you melt the chocolate and pour into a baking tray lined with baking paper and while its still melted but starting to set that is when you cut out the markings as deep as you can.
