Making icecream - no machine

Hi
Thanks to the thread for egg yolks I have found I can make icecream with my left over yolks - wahoo! But I don't have a machine which all the recipes I have found require.
Can anyone give me some tips on how to make it without a machine!I have a hand-held beater and a triblade stick which has a whisk on it.
Thanks so much - I would like to try a chocolate and strawberry icecream if possible. (am drooling at the thought already lol!)

Here is a basic parfait ice cream that you can adapt to your chosen flavours.

Parfait Ice Cream

Serves 12

8 egg yolks
1c sugar
1/2c water
3/8c liqueur or eau de vie
600ml cream

Beat yolks until thick.
Make syrup with sugar and water and cook to 220F.Slowly pour hot syrup into yolks and beat until cold and falls in ribbons.

Whip cream and add liqueur.Fold into eggs, freeze without stirring.

Instead of syrup, use maple syrup and rum.

And here is a semi-freddo, which can be adapted.

Apricot Ginger Semi-freddo

220g dried apricots
1c water
knob of fresh ginger
½ tsp almond essence
1c sugar
2c cream
2c milk

Cook apricots in water 25 min until soft.Purée with ginger and essence.

Scald sugar, 1 c cream and milk, gradually beat in purée.Chill thoroughly and freeze in large container until mushy.

Whip remaining 1c cream until thick, then beat in apricot mush.Freeze.

No need for ice cream machine.

And here is a very simple caramel semi freddo

Ice Cream – Caramel Semi-freddo

4 tab sugar
6 tab water
2 egg yolks
150ml cream, whipped

Make caramel with sugar and 2 tab water.Cool I min, then add 4 tab water and stir until dissolved.

Beat yolks and slowly pour in hot caramel.Beat until thick and cold.

Fold in whipped cream.Freeze without stirring.

thanks for those. I had found a couple of others that use cream and egg yolks (which appeal as I have quite a few yolks) they refer to putting everything in the icecream machine, chill and churn. And that is where I got lost as to what to do manually.
