Cheesecake Help.

A while ago I read on one of these threads, someone had made mini cheesecakes with gingernut biscuits as there base.Do i heat the gingernut biscuit in the microwave and then press into muffin tins. And do they go back to being super hard once they have been made into a cheesecake. Some of my family I'm feeding are eldery, dont want them to break any teeth. Thanks.

I made a cheesecake with a gingernut base on Monday, i just had to finely crush them add melted butter and press into the tin

i think the idea is to make them the night before otherwise they will be way too hard to eat
or i should say fill them the night before, the heating in pans only reshapes them, it doesn't make them softer once cold

I usually soften the gingernuts in the muffin tins and press into the shape. Cool, and they will go hard. This is done in the oven. You could try softening in the microwave then pushing into the tins for the shape. The tins I use are done in the old style muffin tins, which are not so deep.
