Pre-preparing roast veges

Doing roast vege for Christmas day - potatoes, carrots, pumpkin.
Is there naything I can do the day before to pre-prepare them or does everything have to happen on the day!

You can clean and prepare those the day before, but keep them fully submerged in water, and place in fridge.

Also if you want them to cook quickly on xmas day, microwave them for a few mins first, then blot and drizzle with oil, into a hot oven, much faster and easier to cook when ovens are full to capacity, and they come out lovely and crisp!

Got this from Delia Smith. I peel all the vegies I am going to roast, cut into equal sizes. Place in a large snap lock bag.Add enough oil to coat and a couple Tbsp mixed herbs.Shake bag to coat the vegies.Seal and put into the fridge.This can be done a few days before you need them.Works perfect every time.
