I usually use snapper but I need to make a large amount for Xmas day . What do others use ! Is ling or monkfish ok - it's cheaper than snapper.

Trevally is fantastic in a ceviche - the best.Tuna is good but expensive.

Trevelly is better than snapper which is fairly average in a ceviche Kahawai is also excellent if fresh. Trevelly fillet will be half the price of snapper in the shops.
