Delicious Peppermint Fudge for Late Night Cravings

Just made it - it's a winner and will make excellent Christmas gifts.
It's a recipe from Executive Pastry Chef Christopher Jordan.

Super-Easy Peppermint Fudge

2 cups evaporated milk
5 ½ cups granulated sugar
20 large marshmallows
16 oz bittersweet chocolate
½ stick butter
¼ teaspoon peppermint extract
½ cup crushed hard peppermint candy (the ones we grab by the handful from restaurants)

Method:
Bring milk and sugar to a boil. Add marshmallows and boil for 8 minutes stirring the whole time, trust me, it will be worth it! Add chocolate, butter and extract, stir until chocolate is completely melted. Pour in to a sprayed and parchment lined 12'' X 16'' pan. Sprinkle peppermint candy over top and refrigerate for 2 hours until firm.
Cut into squares and store hidden in the refrigerator for your own personal enjoyment and late-night cravings.

Funny I read it as .you have a late night craving so you go whip up some pepamint fudge, but I can't guarantee that I can't lay my hands on 5 cups of sugar late at night!

What does 1/2 stick of butter weigh! Also would it work okay with crushed candy canes. to add a bit of colour!

One stick of butter weighs 125 grams.
