Crystallised lemon peel

Have lots of lemons here and would like to make my own peel for Christmas
cake and pudding.I know it is easy but need quantities etc.Thanks.

catpet, I think this is what you're wanting.

LEMON PEEL FOR CHRISTMAS
3-4 large lemons - Wonder lemons are the best.
Cut into cubes and remove any blemishes then soak 3-4 days in 3 pints of water and 2 ozs salt.Pour off the brine and soak in fresh water overnight.Pour off and boil about an hour - till tender - removing all pith.
Make a syrup of 1 lb sugar and 1 quart water, boil and place peel in same.Cook 1½ hours.Let stand overnight in that syrup.Next morning make a little more syrup and add to saucepan with peel, etc., and cook till clear.It will start to crystallise - stir gently always.Pour off the thick syrup when well crystallised and place peel in sun or warm oven to dry out.Store in jars and keep till Christmas -if possible!
